Polyphenols
Polyphenols are a large and chemically diverse group of compounds characterized by multiple phenolic structural features, including aromatic rings bearing hydroxyl groups. They occur widely as metabolites in plants, where they participate in functions such as pigmentation, defense, and responses to environmental conditions. The term does not describe one single molecular structure, and its precise chemical boundaries vary somewhat among classification systems .1,2
Polyphenols are commonly divided into several structural groups. Flavonoids form a major class and include flavonols, flavanones, flavones, anthocyanins, and flavan-3-ols. Other groups commonly included in nutritional classifications are phenolic acids, stilbenes, lignans, and tannins. Individual polyphenols may also occur attached to sugars or other molecules rather than as free compounds .1,2
Their phenolic groups give polyphenols chemical properties that can include electron or hydrogen donation, metal binding, and interactions with proteins and other biological molecules. Many polyphenols can therefore show antioxidant activity in chemical or laboratory systems. However, describing all polyphenols simply as dietary antioxidants can be misleading because their structures, absorption, metabolism, and biological actions differ substantially .1,3
After ingestion, many dietary polyphenols undergo extensive transformation in the intestine and liver, including conjugation reactions, while unabsorbed compounds may be metabolized by gut microorganisms. Consequently, the molecules circulating in the body can differ considerably from the original polyphenols present in food. Polyphenols are therefore best understood as a broad chemical family rather than as a single nutrient or a group with one universal biological function .2,3
